It's still pretty chilly here in New York, but the sun is shining brighter each and every day, and I can't help but have Spring on my mind! Generally, I crave lighter foods this time of year and that makes salads an easy choice. Here's a great salad to get you in the mood for color and bloom.

What You'll Need

for the salad...

  • 1/2 cup cooked brown rice
  • 1/4 avocado
  • 2 cups spring mix
  • 1/2 cup parsley
  • 1/4 cup red onion
  • 1/4 cup snow peas
  • 1/2 cup carrots
  • 1/2 cup cucumber
  • 1 tbsp grated lemon peel
  • 1 tbsp sunflower seeds
  • 5-6 edible flowers

for the dressing...

  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 teaspoon date sugar or your choice of sweetener 
  • 1 garlic clove 
  • salt & pepper to taste

Here's How

Chop and dice your veggies. Mince the garlic. In a large salad bowl, combine your dressing ingredients together and whisk until all mixed well. Throw in all your salad ingredients, except for the edible flowers, and toss until dressed. Transfer on a small salad bowl and place flowers on top on your dish.
