This simple lentil soup boasts big flavor and feels comforting on a rainy evening. Make a big pot and enjoy throughout the week!

What You'll Need

  • 1 cup lentils
  • 4 ripe tomatoes
  • 1 onion
  • 4 garlic cloves
  • 4 large carrots
  • 4 cups vegetable broth
  • 2 tbsp sea salt
  • 2 tbsp black pepper
  • 2 tbsp cumin
  • 2 tbsp turmeric
  • olive oil to taste

Here's How

Chop up veggies and set aside. Heat up a large nonstick saucepan on high. Throw in onions and garlic. Sauté in no oil until lightly browned at edges. Add vegetable stock, lentils, tomatoes, carrots, salt, pepper, cumin and turmeric. Bring to a boil and reduce heat to medium-low. Cook for about 45 minutes. When you're ready to eat, serve on soup bowls and drizzle some olive oil on top.
