You have probably figured by now that I like my food to be quick and easy to make. Growing up, my mom was the queen of delicious, easy cooking, and she still is to this day. Perfect for a chilly winter evening, this recipe is a staple in my mom's kitchen. 

What You'll Need

  • 1 onion
  • 2 tomatoes
  • 1 green bell pepper
  • 4 carrots
  • 4 medium potatoes
  • 2 cups veggie broth
  • 1 cup fresh parsley
  • 1 tsp oregano
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp red pepper flakes 
  • 1 tbsp tomato paste-1/4 cup olive oil

Here's How

Heat up olive oil in a large saucepan. Chop up onions, pepper and carrots, throw in pan and sauté until soft. Add diced potatoes and let cook for another 2-3 minutes. Add tomato paste, chopped tomatoes, spices and veggie broth. Cover saucepan with lid and bring mixture to a boil, then lower heat to medium-low. Let simmer for 30 minutes. Turn off heat and garnish with fresh parsley. Enjoy!
